Sweet Cookie Sandwich Recipe for your Picnics!

For Cookies:

  • 140g (1.25 cups) all-purpose flour
  • 115g (0.5 cup) unsalted softened butter
  • 60ml (0.25 cup) milk
  • 150g (0.75 cup) Sunehra Mineral Brown Sugar by Trust
  • 180g (1 cup) mini chocolate chips
  • 0.5tsp salt
  • 1tsp vanilla extract

  • Take a large bowl and beat the butter for a minute until completely smooth. Beat in the brown sugar and superfine sugar until it becomes creamy and light in texture. The fine granules of Superfine Sugar by Trust blends right in and makes the cream fluffy. Beat the egg and vanilla extract into the cream.
  • Take another bowl and mix flour, baking soda, salt and cornstarch. Blend in the wet ingredients slowly until combined. Fold in the chocolate chips and cover the dough tightly in a plastic wrap or aluminum foil. Chill for at least an hour.
  • While the dough chills in the refrigerator, let's make the frosting. Take a large bowl and whisk the butter for a minute until creamy. Once the cream becomes thick and heavy, mix some milk gradually and combine until completely smooth. Fold in the chocolate chips gently.
  • Preheat your oven to 177°C (350°F) and prepare your baking tray with parchment papers or silicone mats. Remove the dough from your refrigerator and keep it at room temperature for about 10 minutes. The dough might seem crumbly but it will come together as soon as you start making the balls. Roll about 1 tablespoon of the dough each into balls and line them on the baking tray.
  • Bake for 8-10 minutes until they start turning golden brown at the edges. They will still be extremely soft at the center and might seem a little fluffy. Allow them to cool down for 5 minutes and they will deflate in the process.
  • Take a cool cookie and dollop the frosting on it. Gently press another cookie on top of that to make a sandwich. Repeat the same with all the cookies. You can refrigerate these sandwiches for upto 3 days.
