Get ready with your kitchen torch!

•Take a heatproof bowl and add icing sugar, egg whites and cream of tartar to it. Put this bowl inside a saucepan containing 2 inches of shimmering water, in such a manner that the water doesn't touch the ingredients inside the bowl.

•Remove the bowl from heat and directly add the vanilla extract. Start whisking and continue for about 5 minutes until stiff glossy peaks form. Your meringue is ready! You can pipe or swirl it on your cakes and cupcakes or toast it with a kitchen torch for a delicious marshmallow topping.
